Winter Forest Wedding Cake

Wedding Cake Project Brief

For our Winter Forest cake we wanted to create something contemporary and striking with clean lines and a minimalist look. The idea was to stick to one colour in several hues and use some simple sugar work suited to a winter theme. Using blues we created an almost monochrome look to the cake against the white and added trees, a bear and reindeer for decoration. To enhance the look of the cake, we over extended the top tier, sitting it on two traditional tiers for added height and interest.

How We Made The Wedding Cake

For extended tiers, it is important to ensure that the cakes within are stable and so for these tiers we take a lot more time putting them together! We stack several cakes of the same diameter to create an extended tier and always use ganache around the side, as this sets up to create a firm outer shell. Once all our tiers are coated, they are the covered in sugarpaste and left to set up. While the cake is setting we will use a template to cut out our decorations. They are cut out of thinly rolled paste and set on wires so that they can stand on top of the cake. We cut several trees out of different colours to create the illusion of depth in a forest and then move onto cutting out the animals. Once the shapes are cut and dried, details are added to them using edible paints and royal icing for snow. Once the cake is stacked we add our trees and animals to the cake and finish the look off with a ribbon round each tier and a royal icing snow effect.
