Winter Berries Wedding Cake

Wedding Cake Project Brief

We wanted to create a cake that was suitable for both a winter wedding, but could also be used for a Christmas event or birthday. Our Winter Berries Wedding cake has been decorated with some of the classic signs of winter such as the red robin, fresh berries and pine cones. This is perfect for a winter theme and reminds us of lovely chilly winter walks!

How We Made The Wedding Cake

This cake was created based on a three tier, slightly extended white cake. The cake was covered in white sugar paste and while the bottom tier was still soft, we imprinted it with a diamond design and piped a dot in each crossover to give it some attractive detail. After stacking the cakes we left it to set ready for decorating. To make each pine cone, each layer was made by hand and added around a bud, which took several hours to create. To make the berries we rolled some paste into a ball and affixed it to a wire. They were then painted each of them with highlights to give dimension. Around the middle tier we created a realistic looking ribbon out of a winter green coloured paste, which was rolled very thin to give the look of real fabric bow. Our modellers made a simple robin model to sit on top of the cake and balance the red in the berries and the whole cake was sprayed with edible lustre to give it a snowy effect.

Wedding Cake Ingredients

For this cake we used our fudgy chocolate sponge filled with rich chocolate ganache and salted caramel sauce. Our bottom tier is our vanilla recipe and we added raspberries into the mix, it is then filled and coated with creamy white chocolate ganache.
