Nautical Rose Wedding Cake

Wedding Cake Project Brief

Simple cakes are sometimes the best cakes and need very little decorating to give then a striking look. We based the design on a traditional three tier cake and gave it a more modern look by extending the middle tier. Soft blush sugar roses and a complementary ribbon bring in the couple's theme and colour. With simple cakes the key is in the subtle details, so to enhance the cake but not overload it with details, we added a nautical anchor plaque and a gold metallic rope around each tier.

How We Made The Wedding Cake

The most time consuming element of this cake is creating the sugar roses. Each rose is made by cutting out many individual petals and attaching them to a bud. We also shape and colour the flower to give it a realistic look. This process is then repeated until all the flowers are made, they are then set to dry for adding to the cake later on. Meanwhile, we made the plaque for the middle by cutting out strips of paste in white and blue and cutting out the shape from a template. The anchor is attached to the plaque once dry. Finally the cake is assembled and the ribbon and rope details are added to finish it off.

Wedding Cake Ingredients

For this cake we used our traditional vanilla sponge, filled with jam and buttercream. For the middle tier, we have also covered the cake in a layer of white chocolate ganache. This is recommended for extended tier cakes, as it sets hard and allows for a more perfect finish.
